At the Asian Food Store, we love to cook! Our family makes all kinds of fresh food in our shop; but we also cook at home. Today, we’d like to share a recipe we love for a basic pad thai! Pad Thai By Chef Kai Luang
5 oz rice stick noodle (soak in warm water for 15-20 mins)
1/4 lb shrimp or chicken ( if you prefer)
1 cup of bean sprouts
2 green onions (chopped into 1 inch long strips)
1 Tbsp shallot (minced)
1 Tbsp garlic (chopped)
1 Tbsp red chilies powder
1/2 cup roasted peanuts
2-3 Tbsp fish sauce
2-3 Tbsp sugar
2 Tbsp tamarind juice or vinegar
On a medium heat, fry shallots and garlic until fragrant. Add noodles, stir until noodles are tender. Season with fish sauce, sugar, and tamarind juice (this makes the Pad Thai sauce). Mix the noodles into the sauce, then and push it to the side of the wok or frying pan. Add in a little oil, the shrimp, and sauté until shrimp are fully cooked. Break the eggs and whisk them until scrambled. Toss again with noodles, add in bean sprout and green onions. Stir until everything looks done.
Garnish with roasted peanuts. red chilies, fresh vegetables, and sliced limes.
Note: This is a basic Pad Thai. You can make your own Pad Thai sauce by add in: soy sauce, oyster sauce, or other seasonings.
